Spinach Lasagna

Steam spinach until limp, and then chop. Mix with mushrooms, cottage cheese and seasonings. Line each noodle with 2 to 3 T. of this mixture, roll up and place standing in a shallow baking dish. Combine remaining ingredients. Pour over noodles. Bake at 350 degrees for 20 minutes.

Ingredients: 

2 bunches spinach

¼ lb. mushrooms, sliced

1 c. low-fat cottage cheese

¼ tsp. ground nutmeg

1/8 tsp. pepper

8 cooked lasagna noodles

1 clove garlic, minced

½ c. sliced onion

2 c. pureed whole tomatoes

½ tsp. dried basil

½ tsp. dried oregano
