Cornflake-breaded Baked Fish
Wash and dry fish fillets and cut into serving-size pieces, allowing for shrinkage. Rub each piece with lemon juice. Season and dip in oil. Coat the outside of each piece with cornflakes. Arrange in a single layer in a baking dish that has been oiled. Bake at 350 degrees for 30 minutes or until fish flakes.

1 lb. Fresh or frozen fish
Juice of 1 lemon
¼ tsp. Salt
Dash fresh ground pepper
2 T. oil
1/3 c. cornflakes, crumbled
